  • 1 Slow Cooker
  • 1 High speed blender
  • 1 gallon freezer bag
Ingredients
 
 
  • 2 lb chicken thighs boneless/skinless
  • 2 tbsp parmesan cheese Optional
  • 2 tbsp butter unsalted (or Ghee)
  • 1 cup broth (I prefer chicken broth)
  • 1 garlic bulb cloves peeled and smashed
  • 1 tbsp dried parsley
  • 1 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 lb frozen broccoli florets
Cashew Butter (Blend together):
  • 1/2 cup raw cashews (soaked 15 min in hottest water from the tap)
  • 2 tbsp fresh lemon juice juice of one lemon
  • 1/4 tsp salt
  • 3 tbsp water
Instructions
 
Freezer Directions:
  • Soak Raw Cashews in hot water for 15 minutes. (Hottest tap water should work) Then blend together cashew butter and set aside.
  • Prepare a gallon freezer bag, labeling according to your preferred method.
  • Add all ingredients, except frozen broccoli, to the freezer bag. 
  • Seal bag, removing as much air as possible, and freeze for up to three months.
Slow Cooker Directions:
  • Thaw freezer bag in fridge 12-24 hours before cooking.
  • Dump contents of the freezer bag to a slow cooker. 
  • Cook on low for 4-6 hours. Add Broccoli during last 30 minutes of cook time.
  • Remove chicken thighs from slow cooker, shred chicken, stir back into slow cooker.
  • Serve over rice. Optional: Garnish with green onions and roasted pine nuts.
Instant Pot Directions
  1. Dump the contents of the freezer bag into the Instant Pot, add 1/2 cup chicken broth. 
  2. Set to High Pressure for 20 minutes, then allow a 10-minute natural release followed by a quick release.  
  3. Remove chicken thighs from slow cooker, shred chicken, stir back into slow cooker.
  4. Serve over rice. Optional: Garnish with green onions and roasted pine nuts.

  • 2 tbsp Parmesan Cheese (Optional)
  • 2 tbsp Butter, unsalted (or Ghee)
  • 1 cup Broth (I prefer chicken broth)
  • 1 full head garlic, cloves peeled and smashed
  • 1 tbsp dried parsley
  • 1 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 lb frozen broccoli florets

Cashew Butter (Blend together):

  • 1/2 cup raw cashews (soaked 15 min in hot water)
  • juice of one lemon
  • 1/4 tsp salt
  • 3 tbsp water

How to Make A Butter Garlic Chicken

Prep/freezer directions:

  1. Soak Raw Cashews in hot water for 15 minutes. (Hottest tap water should work) Then blend together cashew butter and set aside.
  2. Label gallon freezer bag with preferred labeling method. Include cooking from frozen directions, and expiration date (three months plus todays date).
  3. Add all ingredients into labeled gallon freezer bag except frozen broccoli.
  4. Freeze for up to three months.

Cooking directions:

  1. Thaw overnight in fridge or in the morning in water (meal may not be 100% thawed but that is ok).
  2. Dump contents of gallon freezer bag into slow cooker.
  3. Cook on low for 4-6 hours. Add Broccoli during last 30 minutes of cook time.
  4. Remove chicken thighs from slow cooker, shred chicken, remove bones and mix shredded chicken back into sauce in slow cooker.
  5. Serve over rice and garnish with green onions and roasted pine nuts, if desired.
